  • Place chicken breasts, sliced carrots, celery, onion, thyme, bay leaf and broth in the Instant Pot insert.
  • Cook on high pressure for 10 minutes, then do a quick release.
  • Remove chicken and shred with two forks. Discard bay leaf.
  • Select the Saute function and bring the broth to a boil.
  • Add in the egg noodles and shredded chicken. Cook for 5-7 minutes until noodles are tender.
  • Season to taste with salt, pepper and chopped parsley before serving.

Cook Time: 30 minutes
