For the chips

  • Cooking spray (optional)

  • 1 tablespoon ground cinnamon

Instructions

Prepare the sugar mixture of cinnamon. Set aside to be divided with a coating.

Cut the tortillas

At the same time, stack 2-3 tortillas on the cutting board.

Take a sharp knife or pizza cutter to slice them into 8 clear triangular wedges.

This is like cutting a pizza. If you would like other shapes, you can cut them into squares or strips, that is fine, too.

Make sure the cut pieces are the same size for uniform cooking.

Butter the tops of the tortillas

Lay the tortillas out on a flat surface.

Then, using a pastry brush, melted butter, and a light touch, brush the surface of each tortilla until the top of the tortilla is covered.

You want enough butter to help the cinnamon sugar stick, but you don’t want to make the tortillas too soggy.

A light, even coat like this is just right.

Cinnamon sugar coating the buttered surface

Now, take a pinch of the cinnamon sugar on your fingers like a sprinkling finger and sprinkle it over the buttered surface of the tortillas until that buttered surface is pretty well covered.

Use a spoon to help spread the cinnamon sugar over the cooled surface of the tortillas.

The butter will help the cinnamon sugar stick to the surface of the tortilla.

Get that air fryer going

The air fryer will need to preheat for a couple of minutes.

Use the dial to set it to 350, then walk away for 2 minutes.

Preheating the air fryer will help it achieve the best possible crispiness for the tortilla chips.

Once those two minutes are up, you can load the air fryer basket with your tortillas.

Try to coat the bottom of the basket with a single layer of tortillas that are all cinnamon sugar side face up.

They must all be in the same single layer.

Air fry the chips

Cook for 5 to 7 minutes, checking after 4 minutes.

When the chips are done, they should be crispy all the way through and have a golden brown edge.

If your chips are made with thinner tortillas, they’ll likely be done in closer to 5 minutes, and thicker ones may too a full 7 minutes.

Firm chips should snap easily when bent.

Add the second coating

As soon as your chips come out of the air fryer, and while they are still warm,

Put all of your chips into a large bowl, accompanied by the rest of your cinnamon sugar.

Toss the chips up very gently, coating all of them.

With the heat actually helping the sugar and butter to melt, your chips are going to be double-coated bakery style.

Cool and serve

The chips should be cooled for a little bit.

Spread them out for 3 to 5 minutes on a large plate or with some wire racks.

If you’re going to be eating them warm, serve them with some dips, or they can be eaten right away.

Storage & Reheating

For 3 days, you can keep completely cooled chips in an airtight container at your room temperature.

Just remember to slip some parchment paper in each layer to keep them from sticking to each other,

Keep in mind that they won’t be quite as crispy as the first day, but they won’t be bad.

If you want to keep them from getting chewy for the first day, keep them stored with a silica gel packet.

Make your chips crunchy again by air frying them for a minute or two again, as described.

You can even specify a temp, like 300°F, for some crispy chips.

The chips will get all weird and frozen if you try to freeze them. Explain as needed.

Ingredient Substituting and Swapping

If you want a slight change in texture and to try a gluten-free option, use corn tortillas instead of flour

Just be careful, as they’ll be more fragile and may break.

Whole wheat tortillas are great to use as well because they add a nice nuttiness and more fiber.

If you want to make dairy-free chips, substitute the butter with melted coconut oil, or use olive oil spray for a lighter option.

If you want a deeper caramel color, try using coconut sugar instead of granulated sugar.

Monk fruit sweetener is a good low-carb option, but it may not brown as much as sugar would.

If you’re looking for different flavors, try adding cardamom or ginger instead of nutmeg.

To add a Mexican chocolate flavor, mix 1 teaspoon of cocoa powder with a little cayenne into the cinnamon sugar.

Success Tips For Air Fryer Cinnamon Sugar Tortilla Chips

Be sure to cut your tortilla into precise shapes to avoid uneven cooking times.

Pay close attention to preheating, as it is crucial to speed up cooking.

During the last minute, keep an extra close watch on your chips, as the golden brown edges can shift to burnt in an instant.

If burnt edges are a problem for you, they brown first, so keep that in mind.

If your air fryer runs hot, then cut cooking times to 325 degrees and add a minute.

Cover the chips in light, even butter to ensure that they are not soggy, since that will prevent the sugar from sticking.

To make the chips even more crunchy, allow them to cool for a while so they’re not too hot to get that extra crisp.
