All you need do is trim your beet leaves but keep the beetroot intact,

do not wash the beets just brush, by washing it will go bad easily and will not last long,

get a sterilized container ready, add sand to the container,

and add your brushed beet leaves to it by placing the beet leaves on top of it.

Storing By Boiling

You can also store by boiling your beet with water till tender,

Then trim, peel, and slice thinly and add ingredients of your choice (vinegar, salt, etc.),

to make it have a great taste and then keep it in a jar to store.
